Chef Jack Kaestner - Oconomowoc
Jack Kaestner has been chief chef at the private Oconomowoc Lake Club for almost twenty years. In that time, he has slowly but surely brought local foods into the mainstream of the club's food service operations. Kaestner has also worked with local farmers to form a network of providers for restaurants, markets and other outlets for their products. In his work and personal life, Kaestner has made it his mission to educate audiences of all ages about local foods and raised the profile of the Slow Food movement. More philosophy than membership society, Slow Food was founded in 1989 as a means to counteract fast food and fast life, the disappearance of local food traditions and people's dwindling interest in--even ambivalence to--the food they eat. A thoughtful chef and foodie, Kaestner is at once passionate yet realistic about the role of local foods in our food system.
